Veg Box | Recipe of the Week

Every week I have the pleasure of being asked to prepare a healthy, delicious and simple recipe to be included in the Rocket Deliveries Weekly Veg Box.  Usually, it’s for the most exotic vegetable of the week and this week it is the far from humble Kohlrabi.

This peppery, fiber filled, member of the cruciferous veg family is unusual but awesome. I used it in a simple rainbow coloured slaw, that packs a big punch in the nutrient department as well as being super tasty and filling.
