Veg Box | Recipe of the Week

Every week I have the pleasure of being asked to prepare a healthy, delicious and simple recipe to be included in the Rocket Deliveries Weekly Veg Box. ¬†Usually, it’s for the most exotic vegetable of the week and this week it is the far from humble Kohlrabi.

This peppery, fiber filled, member of the cruciferous veg family is unusual but awesome. I used it in a simple rainbow coloured slaw, that packs a big punch in the nutrient department as well as being super tasty and filling.

Zingy Kohlrabi Slaw

Ingredients {serves 2-4}

  • 1/2 Red Cabbage
  • 1/2 Kohlrabi (tough exterior peeled off)
  • 2 Medium Carrots
  • 1 Celery Stick, sliced
  • 2 Spring Onions, sliced
  • Handful fresh Coriander roughly chopped
  • 2 tbsp toasted pumpkin seeds
  • Grated zest + juice of 1 lime
  • 1 1/2 tbsp Good quality Olive oil
  • Sea Salt + Black Pepper

METHOD

Finely shred the cabbage, kohlrabi and carrots with a sharp knife, mandolin or in the food processor. Combine the shredded ingredients with celery, spring onions + coriander. Combine zest, juice + oil in a jam jar, shake well and then massage into the slaw with your hands. Season to taste with salt + pepper and shake the pumpkin seeds on top.
