Spiced Quinoa

This week I was chatting about batch cooking with my Yoga for Weight Release + Well Being class and how essential it is (especially when your weeks are busy!) to get out of the mindset of “I’m too busy to cook”…cooking from scratch doesn’t have to be a huge deal, it just takes a little getting used to and finding some recipes that you love, that are simple and that are literally as quick to make as making a sandwich!

I made this for lunch today. It took me 15 mins all in with leftovers for tmr and it was gorgeous…

Take 1 cup quinoa and put it in a pot with 1 1/3 water and little crumble of a stock cube…bring to the boil and then simmer on a really low heat for 13-15 mins (until all the water has evaporated). While the quinoa is cooking heat a dry frying pan and toast some pistachios, then chop half red onion and sauté it with a little oil, and tsp each of cumin, paprika & cinnamon, add in some raisins at the end of cooking and when the quinoa is cooked add half a portion (save the other half for tmrs lunch) to the spice mix to combine. Season well, add some fresh coriander (tweaked by me from a recipe from the Little Green Spoon) Amazing 👌🏼

Once you make this once you’ll never need to refer to the recipe again. It’s really filling, super healthy and delicious.
